The mixture makes it. The AN/2 is made from the native varieties Callet, Mantenegro, and Fogoneu as well as Syrah. The grapes were harvested by hand. A manual and optical sorting ensured that only selected fruits were used. The alcoholic fermentation took place at a controlled temperature of 28°C. Maceration lasted approx. 15-20 days. The wine then matured for a little more than a year in 80% French and 20% American oak barrels. The still relatively young winery was founded in 1994 and uses exclusively native grape varieties for wine production. The production site is just as unique as the wines it produces. The building in which the quality wines of Anima Negra are produced is over 700 years old and is located in the old Son Burguera estate.
