Description

The Zonin Valpolicella Ripasso Superiore DOC is a red wine from the Valpolicella wine region in Veneto. It is produced using the traditional Ripasso technique, which means "repetition". In this technique, the best grapes are partially dried for about 30 days in a ventilated room, then added to the already fermented wine and a second fermentation takes place. The Ripasso slightly increases the alcohol content and enriches the wine with sugars, glycerin, polyphenols and aromas.
