Donna Olimpia
Donna Olimpia is produced from its own grapes generated by vines growing on sandy soils enriched with clay. The fruits are harvested only when fully ripe and after a first strict selection they are transported to the cellar, where they are selected and pressed. The alcoholic fermentation is carried out at a controlled temperature in stainless steel tanks. The repeated bâtonnage gives the wine its roundness and softness and guarantees a high aging potential. Immediately after, it goes to malolactic fermentation. The wine matures for 12-14 months in French barriques, 50% new and 50% old, before bottling and then for another 6 months in the bottle. The winery takes its name from Guido Folonari's wife. On the occasion of their 25th wedding anniversary, he named the estate Olimpia. Guido Folonari is a descendant of the well-known Folonari winemaking family and is a great expert in wine production. Thanks to his extraordinary skills, he creates excellent wines that amaze even the most demanding wine connoisseurs, winning their hearts.
