Description
The partially clayey soils on which the vineyards are located have various morphological characteristics. They are located at an altitude between 100 and 300 meters above sea level. The harvest for Le Difese took place exclusively by hand. Only healthy and fully ripe grapes were used for production and processed by gentle pressing, which gives the wine its excellent structure. Fermentation took place at a controlled temperature and without the addition of yeast. The San Guido winery is named after Saint Guido della Gherardesca, who lived in the 11th century. It is located on the Tyrrhenian coast, between Livorno and Grosseto, in the Maremma, an area made famous by the Italian Nobel Prize winner Giosuè Carducci, and extends over 13 km from the sea to the hills.
