The trick is not the recipe but what you do beforehand: a stocked pantry, a little prep at the weekend and the base cooked in double. Two notes. For the cooking time of pasta, couscous, rice noodles and instant polenta, follow what the pack says and choose the shortest shapes. Risotto is left out on purpose: it takes longer and would break the promise. According to the Swiss nutrition recommendations (SGE and BLV, 2024 edition), it is worth varying protein sources over the week and eating legumes at least once a week: Wednesday and Sunday help with that. In German-speaking Switzerland the Tuesday potatoes are the classic Gschwellti, boiled in their skins.

How do you build a 20-minute dinner?
- Put the water on first, fastest with a kettle, while you prepare the rest.
- Pick a base that cooks fast: short or thin pasta, couscous, rice noodles, instant polenta, or potatoes that are already cooked.
- Add a ready protein: eggs, cheese, tofu, canned legumes.
- Finish with a quick vegetable (fresh in thin slices, or frozen) and a sauce: garlic oil, yoghurt with lemon, a spoon of canned tomatoes.
What makes a dinner fast?
- Cook the base in double: rice or potatoes from the day before save the longest wait.
- Wash and cut vegetables once, for two or three dinners.
- Frozen vegetables and canned legumes: already prepped and always at home.
- One pan, so there is less washing up and you eat sooner.
- Mise en place: everything on the counter before you light the stove.

How long do leftovers keep in the fridge?
Cooking double is handy, but be careful. According to SRF Wissen and microbiologist Lars Fieseler (ZHAW Wädenswil), leftovers keep in the fridge for three days at most; cooked rice always goes in the fridge and is eaten within two days at most (Bacillus cereus). The BLV names four rules: wash, heat, separate, chill. Reheat cooked dishes to 70 °C, and whatever you do not eat straight away goes in the fridge.
