Description

Kairos is a dense and multi-layered red wine, with aromas ranging from baked cherries and red berries to pressed flowers. Nuances of cinnamon, fresh and dried herbs, pipe tobacco, clove, and nutmeg are additionally added to the flavor profile. Kairos matured for two years in French barriques before being bottled. The tannins, which are silky and play around it, ensure a lively fruit acidity. Zyme, the Greek word for yeast, which is indispensable for wine use. The wines are based on both a variety of vineyards and grape varieties. Tradition, experiment, sustainability, and excellence are the central themes of the Zyme winery.
