The grapes for the Campo alla Giostra were obtained from the Donna Olimpia 1898 vineyards in Bolgheri, which lie on sandy soils on the coastal strip near the Tyrrhenian Sea. The alcoholic fermentation took place at a controlled temperature with daily pumping over in stainless steel barrels. Afterward, the alcoholic fermentation was continued with an immersed pomace cap to facilitate the extraction of color and aromas. This lengthened the malolactic fermentation process by 10 days, which took place directly afterward. The wine was then allowed to mature for 18 months in oak barrels and 6 months in the bottle. The winery was named after Guido Folonari's wife. On the occasion of their 25th wedding anniversary, he gave the estate the name Olimpia. Guido Folonari is a successor of the well-known Folonari winemaking family and knows his way around winemaking very well. Thanks to his outstanding skills, he creates outstanding wines that can surprise even the most demanding wine connoisseur and conquer their heart.
