Fontanafredda
The Barolo Riserva from Fontafredda was obtained from Nebbiolo grapes, which grow in the vineyards of the Langa Albese region at an altitude of approx. 300-400 meters and whose soils show a high lime and marl content. After the harvest, the traditional fermentation process took place in stainless steel tanks for approx. 10-12 days with constant pumping over at a controlled temperature of approx. 30-31 °C. Afterwards, the must remained on the skins for a while, which allowed the polyphenolic substances to extract and thereby facilitated the malolactic fermentation. The wine then matured for 24 months in large Slavonian and French oak barrels. A refinement in the bottle took place for at least twelve more months. The result of the long maturation is a well-structured red wine with a ruby red color in the glass, which shimmers violet and provides a clean and intense bouquet. The Fontafredda winery owns over 120 hectares of ecological cultivation areas and was founded in 1858. For many years, the company has been working with several winegrowers to guarantee wines of excellent quality. The goal of the estate is to ensure innovative and future-oriented clean production, in order to leave the land found to future generations cleaner than it was found.
